A Winter (Sort of) Pesto

I love homemade pesto sauce. When the balcony basil plants that Desirae and Rudolph tend are robust enough, I strip them of their leaves and make yummy ‘classic’ pesto.**

But then sources of fresh basil drop off with the arrival of cold weather.  Wintertime hot house-tended herbs are typically more $$ than I want to spend (there are shoes to save up for, you see). OH NOES! What to do, what to do?  Make a winter pesto! Here’s how . . .

Buddha Bowl with Quinoa

I’ve spent 30 years of my life as an ovo-lacto vegetarian, and two years as a very strict (and wheat-free) vegan. About two years ago I left those styles of eating behind, and now I cook and consume meat at least a couple of times a week. However, my love for vegetable-based meals hasn’t diminished. That’s why at least once a week I eat a buddha bowl with quinoa.
